Bourgogne Aligoté
The Aligote comes from a 0.40 hectare parcel around the village of Corgoloin. Fermentation occurs at low temperatures for around three months, depending on the vintage. The wine is then aged entirely in old barrels.
Bourgogne Blanc
Didier's Bourgogne Blanc comes from a 0.20 hectare parcel around the village of Corgoloin on the east side of the D974 road. Harvest is, as always, done manually. Fermentation occurs at low temperatures for around three months, depending on the vintage. The wine is aged for twelve months entirely in barrel, only around 20% of which is new.
Cote de Nuits Villages Blanc
The Cote de Nuits Villages Blanc comes from a 0.80 hectare parcel west of the village of Corgoloin. The vines on average are now fifteen years old. Fermentation occurs at low temperatures for around three months, depending on the vintage. The wine is aged for twelve months entirely in barrel, only around 20% of which is new.
Bourgogne Rouge
The Bourgogne Rouge comes from a 1 hectare parcel south of the village of Corgoloin. The vines on average are now twenty years old. The grapes are not destemmed and the extractions are light with manual punchdowns and some pumping over. The wine is aged for fourteen to sixteen months entirely in barrel, only around 10% of which is new.
Cote de Nuits Villages Rouge
The Cote de Nuits Villages Rouge comes from 0.80 hectares across three different parcels west of the village of Corgoloin. One is near the town cemetery while the other two are on higher elevation along the Route de Villiers. The vines on average are now forty years old. The grapes are not destemmed and the extractions are light with manual punchdowns and some pumping over. The wine is aged for fourteen to sixteen months entirely in barrel, only around 10% of which is new.
Hautes Côtes de Nuits Rouge
The Hautes Côtes de Nuits Rouge comes from a 0.80 hectare parcel west of the village of Corgoloin. These are Didier’s highest-elevation vines and are just across the appellation border from his Côte de Nuits Villages parcels. The soil is particularly stony here which gives the wine a potent minerality. The vines on average are now 30 years old. The grapes are not destemmed and the extractions are light with manual punchdowns and some pumping over. The wine is aged for fourteen to sixteen months entirely in barrel, only around 10% of which is new.
Cote de Nuits Villages La Rue des Foins
"La Rue des Foins" is made from half a hectare spread across two parcels between Corgoloin and Comblanchien. The parcels were singled out by Didier Fornerol and Jean-Pierre de Smet for consistently producing higher quality fruit and as a result are vinified and bottled separately.The vines on average are now forty years old. The grapes are not destemmed and the extractions are light with manual punchdowns and some pumping over. The wine is aged for fourteen to sixteen months entirely in barrel, only around 10% of which is new.
