In the Langhe, it is said that one must taste a winemaker’s Dolcetto in order to understand his potential.
This Dolcetto is a testament to Simone’s skill as a winemaker. It is sourced from just under a hectare in Monforte d’Alba's cru of Bricco San Pietro. Maceration is short, usually under 8 days, and the wine is fermented and aged entirely in stainless steel.
Simone's Barolo is sourced from a three hectare south-facing parcel of Nebbiolo (70% Michet clone, 30% Lampia clone) in Monforte d’Alba. The maceration time is usually around 3 weeks in stainless steel. The wine goes through malolactic fermentation in barrel for approximately 2 months before aging for an additional 22 months in a combination of neutral French barrique and neutral botti. Before being bottled, it ages for 12 months in concrete tanks. It is not fined or filtered.
