Morgon

The soils in Sebastien's parcel of Morgon are sandy granite based soils in their second year of being worked towards conversion to organic viticulture. The vines are adjacent to Guy Breton's old vines.

The wine is hand-harvested and goes through semi-carbonic maceration in cement for twelve days without seeing any sulfur. It is aged entirely in five year old barrels.

Regnie

The soils in Sebastien's parcel of Regnie are ancient alluvial soils in their second year of being worked towards conversion to organic viticulture.

The wine is hand-harvested and goes through semi-carbonic maceration in cement for eleven days without seeing any sulfur. It is aged in a combination of five year old barrels and sixty year old foudres (2,500L) that are blended one month before bottling.
