Il Paradiso currently has 2.5 hectares of Sangiovese Grosso, 2 hectares of which produce Brunello. Fermentation and aging are done consistently across the three wines with the only variance being the length of aging. Fermentation is in cement, always with indigenous yeast, and the wines are aged in large Slavonian oak botti (25 to 30 hectoliter).
