Vinification for both wines is identical and done in a combination of 228-liter and 500-liter barrels. Guillaume works without any enzymes, commercial yeasts, fining, filtration, or cold stabilization. He riddles every bottle by hand.

Champagne "Chemin des Chappes" Extra Brut Blanc de Noirs 1er Cru

50% Pinot Noir and 50% Pinot Meunier from two plots of selection massale vines in Vrigny: Les Grands Chemins (planted in 1972, eastern exposure and sandy soil) and Les Chappes (planted in 1982, a western facing plot composed primarily of silt and directly contiguous to Egly Ouriet's parcels).

Champagne "Les Prés Dieu" Extra Brut Blanc de Blancs 1er Cru

The majority of his parcels are located on a mid-slope with various exposures. "Prés Dieu" is made up of 100% chardonnay derived from two parcels: the one in Coulommes, otherwise known as the “Vignes Dieu” has southern exposure, while the one in Vrigny, known as “Prés,” where the cuvée gets its name,  has eastern exposure.

The vines grow on a bed of “sables du Cuisien” (fine sand) with traces of Bartonian limestone on the surface and numerous small fossil shells.
