Hautes Cotes de Nuits Rouge `Louis Auguste`

Vine age: 50 years
Exposure: South
Soil: Limestone and marl
Viticulture: Organic & Biodynamic
Vinification: The grapes are hand-harvested, sorted, and vinified with around 50-60% whole bunches. The must spends 17 days in tank with between 5-7 punch-downs by foot as well as some pump-overs. After pressing, the juice settles for two weeks and is put into barrels, around 30% of which are new. After 14 months of élévage, the wines are racked into tank where they rest for 3 months and are bottled unfined and unfiltered.

These are some of the family's original vines, up in the Hautes-Côtes de Nuits near the village of Chevannes. High-toned and bright due to the high elevation and limestone-rich soils. Louis-Auguste is the name of David's son.

Bourgogne Rouge

Vine age: 45 years
Exposure: Southeast
Soil: Alluvian limestone
Viticulture: Organic & Biodynamic
Vinification: The grapes are hand-harvested, sorted, and vinified with around 50-60% whole bunches. The must spends 17 days in tank with between 5-7 punch-downs by foot as well as some pump-overs. After pressing, the juice settles for two weeks and is put into old barrels. After 14 months of élévage, the wines are racked into tank where they rest for 3 months and are bottled unfined and unfiltered.

The fruit for the Bourgogne Rouge comes from vines in the communes of Chambolle-Musigny and Morey-Saint-Denis.

Cote de Nuits Villages Rouge

David's Côte de Nuits Village comes mostly from the village of Brochon, just next to Gevrey-Chambertin.

Gevrey-Chambertin

80% from the Brochon (north) side of the village, the remainder on the Morey-Saint-Denis side

Nuits St Georges

Nuits-Saint-Georges 1er cru `Aux Thorey`

The Aux Thorey 1er Cru is located just north of the town of Nuits-Saint-Georges, adjacent to NSG 1er Cru Chaignots.

Morey St. Denis 1er Cru
